His Story
I grew up in Rabat, in a house where the kitchen was the heart of everything. My mother cooked the way her mother taught her — slowly, deliberately, with spices measured by instinct and love measured by the hours she spent at the stove. My grandmother, who was from Fez, passed down recipes that carried the deep culinary soul of that ancient city. I learned to cook by watching, by tasting, by asking questions she answered with a wooden spoon and a patient smile.
After training in the culinary traditions of Fez and Marrakech, I moved to Washington DC — a city of diplomats, dreamers, and people hungry for something real. I found that Moroccan food, with its layered flavors and its culture of gathering, spoke to people here in a way I hadn't expected. It reminded them that a meal is never just a meal.
Today I cook privately — for families celebrating milestones, for couples marking anniversaries, for friends who simply want an evening that feels like somewhere else entirely. I bring everything with me: the tagines, the spices sourced directly from Moroccan souks, the mint for the tea. All you need to bring is your appetite and the people you love.

My Philosophy
Patience is the First Ingredient
Moroccan cuisine cannot be rushed. A proper tagine needs hours. A good couscous is steamed three times. The flavors that make people close their eyes at the table — those come from time, not shortcuts. I cook the way I was taught: with patience, with respect for the ingredients, and with the belief that food prepared with care tastes different from food that isn't.
